Menus for the week of 8/19/12

I meant to put these up earlier in the week but then got all sidetracked cooking and whatnot! Just in case you were wondering.. here is what I’ve been doing this week:

Hawaiian Turkey Meatloaf with Pineapple Chutney,

Orange Battered Tempeh with Pineapple Chutney (veg option),

Whipped Sweet Potatoes,

Romaine Lettuce with Papaya, Plantain chips, Garbanzo Beans, Coconut and Pineapple Tahini Dressing

Thai Pork Wraps (Lettuce Leaf wraps with Thai Pork, Green Beans, Carrots and Cucumber),

Thai Tofu Wraps (veg option),

Jasmine Rice with Scallions, Red Peppers,

Baby Greens with Carrots, Enoki Mushrooms, Hothouse Cucumber, Ginger Vinaigrette

Roasted Red and Yellow Beets with Skordalia (Garlic Sauce),
